-100g (3 ½ oz) skinless, boneless free-range chicken breast
-salt and pepper
-raw vegetables (as many as you want): carrots, cucumber, celery, chopped into batons, and cherry tomatoes, halved
-1 tbsp full-fat cream cheese, or non-dairy alternative
1.Preheat the oven to 200°C (400°F/Gas 6). Line a baking sheet with greaseproof paper.
2.Cook the chicken on the prepared sheet for 25-30 minutes, or until it is no longer pink on the inside when sliced. Season with salt and pepper, to taste.
3.Meanwhile, cook the rice according to the packet instructions.
4.Serve the chicken and rice with the raw vegetables and cream cheese.
