AVOCADO AND SALMON TARTARE
AVOCADO AND SALMON TARTARE
For the tartare
-1 skinless, boneless wild salmon fillet*, about 200g (70z)
-Juice of 1 lemon
-1 tart eating apple
-½ avocado
-Small handful of dill, chopped
For the dressing
-1 tsp extra virgin olive oil
-1 tsp balsamic vinegar
-1 tsp reduced salt soy sauce
1.Finely chop the salmon, place in a small bowl, and cover with half the lemon juice.
2.Peel and slice the apple and avocado half and place in a separate small bowl. Cover with the remaining lemon juice.
3.Make the dressing by whisking all the ingredients in another bowl, cup, or jar, until thoroughly mixed.
4.In a serving bowl, stir together the salmon, apple, and avocado. Cover with the dressing, sprinkle with the dill, and serve.
